Labar-dolareak Arabako Errioxatik barreiaturik aurki ditzakegu. Orokorrean, zona altuetan aurkitzen dira, askotan antzinako baseliza, hiltegi edota jenderik bizi ez zen eremuekin erlazionatuta. Lurzoruko hareharrian indusitako forma biribileko eraikuntzak dira, eta metro bateko diametro eskasa dute, eta sakoneran 30 cm baino ez. Honela, mostoa lortu ahal izateko mahatsak zapaltzeko harraska sortzen zen. Harraska honetatik hodi bat irteten zen, mostoa “torco” deritzon biltegi batera bideratuz. Los lagares rupestres se encuentran diseminados por Rioja Alavesa. Se localizan, por lo general, en zonas elevadas y frecuentemente asociados a antiguas ermitas, cementerios o despoblados. Se trata de construcciones de forma redondeada excavadas en la roca arenisca del substrato, cuyo diámetro supera por poco el metro y su profundidad ronda los 30 cm, constituyendo una pileta destinada a la obtención del mosto mediante el pisado de las uvas. De esta pileta salía un canal por el que el mosto era conducido a un depósito llamado torco. Se construyeron entre los siglos IX al XII y algunos estuvieron en uso hasta el siglo XVIII.
The cave winepresses are scattered all over the Rioja Alavesa. These are generally located on high altitude places and frequently associated to old churches, graveyards or deserted areas. These are round shaped constructions caved in the substratum sandstone, which diameter barely exceeds one meter and its depth measures around 30cm . Constituting a basin destined to obtain grape juice by the grape stepping. From this basin, a canal conducted the grape juice into a deposit named ¨torco¨. These winepresses were built between the 9th and 12th centuries and some were used until the 18th century.
